WITH summer upon us, renowned chef Lap-Fai Lee will be at Webbs of Wychbold running sessions to teach people how to barbecue ‘Low ‘n’ Slow’.
During his masterclass he will use locally sourced quality meat from The Butcher’s at Webbs, explaining in detail how to best prepare and season pork spare ribs, beef short ribs, hot links and Lockhart pork chops.
He will then demonstrate how to barbecue them to ‘smoky perfection’ on a top-of-the-range Traeger pellet grill or the Weber smoker barbecue.
Lap-Fai takes much of his flavour inspiration from time spent in Texas where beef reigns supreme, simplicity is key and cooking slowly on a low indirect heat is an artform.
Waiting hours for your lunch over a beer is all part of the culture in Texas but the wait is worth it – as he will show in the masterclass.
After a few hours, participants will be rewarded with a lunch of the juiciest, smoky, tender meats and return home masters of low ‘n’ slow barbecue cooking.
Low n Slow runs this Saturday and Sunday, July 10 and 11, and during the weekend of August 14 and 15.
